Ingredients
26 vanilla-snap cookies 1 16-ounce package of unsweetened frozen strawberries or 3 ½ cups of fresh sliced strawberries ½ cup of nonfat plain or strawberry yogurt If using plain yogurt; 1 to 2 tablespoons of sugar 1 tablespoon of lemon juice

Directions
1. Combine the strawberries and sugar (if needed) into the food processor.
2. Add in the yogurt and lemon juice while the food processor is running and process until it is smooth and creamy.
3. Let firm up in the freezer for about 30 minutes.
4. Once it has hardened use a tablespoon to scoop out frozen yogurt and place onto a vanilla-snap cookie. Top with another vanilla-snap cookie to make a sandwich.
5. Continue until you have used all of your vanilla-snap cookies and enjoy!
