Chica's Chilled Tomato Soup

Ingredients

  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 pepper (red, yellow, or green) seeded and diced
  • 46oz. or 1 large can of tomato or vegetable juice

Supplies

  • Large bowl
  • Food processor (optional)

Directions

  1. Have your Sproutlet help mash up the diced tomato in a bowl. (lightly pulse in blender if desired)
  2. Add diced cucumber and diced pepper to the bowl.
  3. Pour in the tomato or vegetable juice and stir.
  4. Chill for 20-30 minutes in the refrigerator.
  5. If juice is already chilled, serve immediately.


*Parent tip:  For smaller Sproutlets, pulse cucumber and peppers in a food processor or finely chop into smaller pieces
