A meal big enough for a dinosaur!

Prep Time: 40 minutes (10-20 minutes to prep and rice needs 30 minutes to cook)
Makes: 4 servings
Serving Size: ¾ cup rice and 2 chopped cutlets

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 lb. boneless skinless chicken cutlets
  • 1 cup broccoli florets steamed
  • 1 tsp. olive oil
  • 2 tbsp. soy sauce

Supplies

  • 2-quart pot
  • Skillet

Directions

  1. Mix brown rice with 2 cups water and bring to a boil. Once water boils, reduce heat and let simmer for 20-30 minutes or until rice is soft and fluffy.
  2. Put olive oil in skillet and add chicken. Cook on medium high heat until chicken is completely cooked.
  3. Once rice is done, add 2 Tbsp. of soy sauce and mix.
  4. Chop cutlets and broccoli into small “treasure” sizes.
  5. Place ¼ cutlet cubes and broccoli bites into bowl and cover with ¾ cup of rice.
