Wash the chicken with plenty of detergent to clean off any fat from the surface. Turn the chicken over and pull the skin tight. Sew up with a needle and thread. Pull the neck skin tight and pin. Stuff the bird tightly with wet paper towels. This keeps the bird plump and creates steam.

If you don't want to get sick from eating raw meat, you have to cook a chicken all the way through. But a fully cooked bird has ugly wrinkles when it comes out of the oven. You've got to use some tricks to get picture-perfect, golden smooth skin.

RECIPE
  • 1 chicken
  • Dishwashing soap
  • 1 roll paper towels
  • Needle and white thread
  • Pins
  • Red and brown food coloring or molasses mixed with water, oil and a drop of soap
  • Blowtorch
