Ingredients
- 2 oz of butter
- 2 onions, finely chopped
- 4 red or yellow peppers, deseeded and chopped
- 1 tbsp of mild curry powder
- 8 1/2 fl oz of dry white wine
- 2 lbs of haddock or other firm white fish, skinned and roughly chopped
- 20 fl oz of milk
- 17 fl oz of cream
- 20 fl oz of fish or chicken stock
- 1 oz of flakes almonds, toasted
- salt and pepper
- 1 tbsp of lemon juice
Haddock Soup
Serves 4 people.
- Soften the onions and peppers in melted butter. Add the curry powder and wine and cook for two minutes.
- Add fish, milk, stock and cream and simmer for 20-30 minutes
- Puree the mixture in a food processor and pour it back into a rinsed saucepan.
- Heat through and season to taste.
- Garnish with the flaked almonds.
