Well back when Charles Darwin was around and he was coming up with all of his theories about evolution, like his idea that people came from monkeys, people thought he was a little crazy. So it became a sort of joke, and people would say "I'll be a monkey's uncle!" to mean that something was ridiculous or impossible.
